Italian Chicken Meatloaf

Introduction

Savory chicken meatloaf with the flavorings of Italian sausage and a fraction of the fat of regular meatloaf. Savory chicken meatloaf with the flavorings of Italian sausage and a fraction of the fat of regular meatloaf.
Number of Servings: 8

Ingredients

    2 lbs. ground chicken
    1 large stalk celery
    2 medium carrots
    1 large egg
    1 c. breadcrumbs
    1-1/2 t. ground black pepper
    1-1/2 fennel seeds, crushed
    1/2 to 1 t. pepper flakes
    1 t. salt
    1 T. Italian seasoning.

Directions

1. Preheat oven to 350 degrees.

2. Chop celery & carrots in a food chopper.

3. Mix celery & carrots, ground chicken, and all remaining ingredients in a mixing bowl.

4. Transfer to shallow baking pan, shape into a loaf, and bake at 350 for 50 minutes to 1 hour or meat thermometer inserted in middle of loaf reads out 175 degrees Fahrenheit.

Serves 10.
