Annica's Chicken and Dumplings

Ingredients

    5 chicken drumsticks
    1 chicken breast
    3 TBSP light margarine (can be substituted with oil)
    1 cup chopped onion
    1 cup baby carrots
    10 cups water
    3 TBSP + 1 tsp chicken bouillon powder
    2 TBSP seasoned salt
    1 TBSP rosemary
    1 TBSP thyme
    2 TBSP onion powder
    2 TBSP pepper
    1 can green beans
    2 cups Jiffy Baking Mix
    2/3 cup nonfat/skim milk
    1.5 TBSP parsley flakes
    2 TBSP sugar

Directions

Makes 5 servings (1 drumstick, plus veggies, broth, dumplings, and chopped chicken breast pieces)

1. Melt margarine or oil in stew pot. Add chopped onions and garlic to brown.

2. Add drumsticks and chicken breast cut into 1- inch cubes. Brown evenly on each side.

3. Add 10 cups of water, bouillon powder, salt, pepper, seasonings (to taste), and carrots. Bring to a boil.

4. After pot has come to a boil, reduce heat to medium and simmer for 30-45 minutes. Taste broth occasionally to add seasonings, if necessary.

5. In a bowl, add Jiffy Baking Mix, parsley flakes, and sugar and stir to combine. Less sugar may be used for a more savory dumpling. Add milk and stir until mixture resembles a sticky dough.

6. Using two spoons, drop spoonfuls of the dough mixture into the simmering pot, making sure not to drop dumplings on top of each other. Cook for 15-20 more minutes, turning dumplings over halfway through.

7. Add canned green beans and stir to combine. Serve and enjoy!
