This south-american recipe it's a complete source of protein for vegans, great source of potassium and fiber and taste delicious, the exotic flavor of the green plantain it's a fresh change from soy and gluten meat alternatives, Enjoy!
Number of Servings: 10

Ingredients

    5 cups ripe red tomatoes, sliced
    4 garlic cloves
    1 medium onion, sliced
    4 green plantains, shreded
    4 tbs soy sauce, low sodium
    1 tsp thyme
    0.5 tsp basil
    1 tsp salt
    12 tbs natural peanut butter
    1 cup whole wheat flour
    2 tsp oregano

Directions

Blend all the ingredients except the green plantain and flour. Transfer to a mixing bowl and add shreded plantain and flour and stir until is well mixed. Transfer into greased metal containers (empty cans will work perfectly) and cook in a double bolier for 3 hours. Remove from heat and let it cool before cutting into 10 equal portions. Serve this roast with your favorite sauce or use it as lunch meat in your sandwiches, delicious!!!
