Kickin' Creamy Chicken Stew in a Slow Cooker using FROZEN chicken breasts

Submitted by: APRILDAWN678

Introduction

For this recipe I use frozen chicken tenders or chicken breasts in my slow cooker. This is a good recipe to substitute beans, veggies, etc. and make it they way you want.
Note: I also have a low sodium version of this recipe that is similar, and tastes good, too!
For this recipe I use frozen chicken tenders or chicken breasts in my slow cooker. This is a good recipe to substitute beans, veggies, etc. and make it they way you want.
Note: I also have a low sodium version of this recipe that is similar, and tastes good, too!

Number of Servings: 10

Ingredients

5 Frozen Chicken Breasts (or 20 frozen Chicken Tenders)
1 16 ounce jar Salsa Verde
    2 cans Black Beans
    1 can Sweet Corn
1 can Diced Tomatos with no salt
    1 teaspoon Ground Cumin
1 small (3 oz) package of cream cheese

Directions

Place frozen chicken breasts or tenders in bottom of slow cooker. Add remaining ingredients except cream cheese.

Cook on low for 8-10 hours. At this point I remove about 1/2 the liquid because I like my sauce thick, like a stew. You can leave all the liquid if you want a "soup". Add cream cheese, cook on warm setting for 30 minutes, then stir.

This can be served over rice or wrapped in flour tortillas (not included in nutritional info.)

One serving is 1/2 a breast or 2 large chicken tenders.

Number of Servings: 10

Loved this recipe!! I made a few additions based on other's comments..I added low sod. taco seasoning, cilantro, sliced mushrooms, and used whipped cream cheese. Will def make again. SO easy! (Camo..I think the chicken is supposed to fall apart..it's a stew.) - 11/25/08

This was SENSATIONAL!!!!! I added about 3 chicken and tomato bouillon cubes. It gave it more seasoning, but not as much sodium. We loved it over the brown rice and had enjoy for two nights!! This was a dream meal for me because it was effortless and not time consuming. Can't wait to eat this again!! - 2/6/09

Great recipe!! You have to be careful putting frozen meat at the bottom. It can cause the bowl to crack (I've had two crack). If you put it on the salsa or tomatoes, it is safer. - 2/6/10

Very close 2 a recipe we have as a standard, except we use cilantro & no cumin. Plus we top the stew with FF Sour Cream instead of mixing it in (FF Sour Cream doesn't do 2 well when cooked). Tried UR recipe w/ cumin, but still used FF Sour Cream as a topping. Good! Cumin & Cilantro both next time! - 10/13/09

Buy South West Salsa which includes blk beans, corn, stewed type tomato with choice of mild medium or hot. Less expensive to buy whole cooked chicken at market, then shred for soup. I do add low sodium chicken broth. Add as much low fat sour cream as desired to make it creamy. - 11/9/08

this was absolutely fantastic! the stew meat came out a little tough, i browned it before i put it in the pot and i slow-cooked it or 8 hrs on low, i'm not sure what happened there. but the flavor was so fantastic. - 4/1/09

This is awesome! It is soo easy and delicious. The recipe makes quite a bit so we can have it multiple days in mulitple ways. My boyfirend loves it on burritos, I love it over rice, yet it is hearty enough to eat all by itself, too! Even my boyfriend's kids love it! I highly recommend! - 3/15/09

I would definitely make this again! It makes it so easy to get a restaurant style meal without the restaurant calories (or price.) And my husband loved it! He didn't believe it was a healthy sparkpeople recipe :) - 3/4/09

Been awhile since I made this...so had to make it again today. We love it! We either eat it over chips (like nachos) or in tortillas, also love it with Rice. This is one of the best chicken dishes I have found! Thanks for sharing it!!!!!!!!!!!!!!!!!! - 1/17/09

  • This was very good. I put the salsa and tomatoes in first then the frozen chicken on top of that as I was worried about my crock cracking. I also added a can of green chilies and some hot sauce as we love spicy. I'll make this dish again, can't get any easier than this and it's tastey. - 9/14/12

  • Made this for the first time yesterday. Really liked it. But next time I think I will reduce the chicken breasts to 3. I shredded the chicken breast after they were cooked, and it made a lot. Plenty of left overs :) Thanks for the recipe! - 8/23/12

  • Not too pretty, but tasty and satisfying. Next time I'll sneak more veggies in there and maybe some fresh cilantro. - 7/17/12

  • I made it this morning before I left for work and just got home and the house smelled amazing! I broke down and tasted it before adding the cream cheese. I more than tasted it, I had a small bowl. I haven't even served it yet to anyone. I love it! It's is totally one of my favorites! Thank you! - 5/25/12

  • I throw half a cup of rice in for the last two hours. Yum!
I skip adding the cream cheese. - 5/9/12
