Beef and Mushroom FajitasSubmitted by: WABTCZN
1/4 cup lime juice
1 1/2 tsp chili powder
1 tsp dried oregano
3 cloves garlic - pressed or chopped
1 lb top beef round steak, trimmed
1 1/2 cup mushrooms, sliced or diced
1/2 medium onion, sliced
1 cup green bell peppers sliced
1 cup red bell peppers sliced
10 fat free flour tortillas
Coat nonstick skillet with nonstick spray, and warm over medium-high heat. Add meat, mushrooms, and 2 TBS of marinade. Cook for about 5 minutes, stirring frequently, until meat is cooked. Remove and set aside.
In same CLEANED skillet, recoat with spray, and warm over medium-high heat, add onions and peppers. Cover and cook for about 2 minutes, or until onions begin to release moisture. Uncove, and cook additional 4-5 minutes, stirring frequently, until onions are golden.
Divide beef mixture among tortillas and spoon in middle, top with onions and peppers and fold to enclose.
