Ingredients

    1/3 cup sliced mushrooms
    1/3 cup sliced zucchini
    1/4 cup tomato sauce
    1/8 tsp garlic powder
    1 6-1/2" pita
    2 TBS chopped scallions
    1 TBS fresh basil roughly chopped
    1/4 tsp dried oregano
    1 jumbo black olive, chopped
    1/4 cup shredded fat-free mozzarella cheese

Directions

Preheat oven to 425F.
Place mushrooms and zucchini in a large nonstick skillet. Coat with spray, cover and cook over medium-high heat for about 2 minutes, or until mushrooms start to release juice. Remove the cover and cook, stirrin occasionally for about 2 minutes or until veggies are golden. Stir in garlic powder and 2TBS tomato sauce. Set aside.
Place pita on baking sheet. Bake for 1 minute or until crisp. Remove from oven and spread with remaining 2 TBS tomato sauce. Spon on mushroom mixture, and sprinkle with scallions, basil, oregano, olives, and cheese.
Bake for 8-10 minutes or until cheese is melty and golden.
