Introduction

This isn't as authentic as it could be as it's missing galangal and Kaffir lime leaves- if you can find them, add the galangal instead of the ginger. The taste, however, is a close approximation for far less carbs than you'd get in a restaurant. Ingredients

    Coconut Milk, 3 cup
    Chicken Broth, 3 cup
    Tofu, soft, 1 block (cut in small cubes)
    Chicken Breast, no skin, 16 ounces (cut into small strips)
    Mushrooms, fresh, 2 cup, pieces or slices (cut into strips)
    2 stalks lemongrass, chopped
    1 2 1/2 inch piece ginger, minced
    4 tbsp. fish sauce
    1 package splenda
    Juice from 2 limes
    2 Serrano peppers, minced


Directions

Combine broth and coconut milk in a large pot. Add all ingredients into pot and bring to a boil. Reduce to simmer for 20 minutes. Makes 6 appetizer portions or 4 substantial meal sized portions.
