AWESOME veggie chili

Introduction

This chili is full of flavor! It's a family favorite! This chili is full of flavor! It's a family favorite!
Number of Servings: 6

Ingredients

    1 can black beans
    1 can kidney beans
    2 Tbsp olive oil
    2 garlic cloves
    1 green pepper, seeded and diced
    1 onion, finely chopped
    1 jalapeno pepper, seeded and finely chopped
    1tsp cumin
    1 tsp coriander
    1 tsp dried oregano
    1 tsp dried cilantro
    2 Tbsp chili powder
    3 Tbsp tomato paste
    1 can canned chopped tomato
    1 tsp sugar
    1 tsp salt
    1 cup vegetable stock


Directions

Heat oil..(medium heat)
Add chopped peppers and onion.
Add spices-- mix well.
Cook for about 5 minutes. Add garlic and cook another 2 minutes.
Add canned tomatoes--do not drain water from can.
Add tomatoes paste. Stir well. Let cook about 5 minutes.
Drain beans and wash with water.
Add beans.
Mix well.
Add sugar and salt.
Add vegetable stock.
Mix well.
Cover with lid.
Cook on low heat for about 15-20 minutes.
