Ingredients

    cooking spray
    3 Cups chopped onion
    3 Cups red peppers chopped
    2.5 Cups green peppers chopped
    5 Cups egg plant peeled and chopped
    4 Cups yellow squash chopped
    2.5 cups zucchini chopped
    2 bay leaves
    4 TBLS dried basil
    2 Tbls Dried oregano
    1 tsp salt
    1.5 tsp pepper

Directions

coat a stock pot with cooking sparay. med heat Add onions and peppers. cook until almost tender. add eggplant cook stirring 5 minutes then add squash and zuchinni and saute another 5 minutes. add tomatoes herbs salt and pepper. stir every few minutes until boiling. reduce heat to low simmer for 1 hour. stirring occasional1y Remove bay leaves before serving...
