Ginger-Lemon Rice

Ingredients

2 3/4 C. Chicken Stock
1 1/2 C. White Rice
4 Scallions
3 Inch piece of fresh ginger root
Zest and juice of 1 lemon
Directions
Combine chicken stock, lemon zest and ginger in a pot with a tight fitting lid. Cover and bring to a boil over high heat. Add the rice, stir, and bring back up to a simmer, then cover and cook over low heat for 18 minutes or until tender. Discard the ginger root, add the scallions and lemon juice and fluff the rice with a fork until the scallions are well distributed.
