2 slices Jennie-O Extra Lean 95% Fat Free Turkey Bacon, chopped
2 Large Eggs, fresh
5 Egg whites
2 cups fresh Spinach
Â½ cup chopped Green Bell Peppers
Â½ cup Sweet red bell peppers
Â½ cup Sliced Onion
2 cloves Garlic, chopped
Â¼ cup Kraft Shredded 2% Mexican Four Cheese blend
2 tsp Olive Oil, Extra Virgin
1 tsp Thyme, fresh
2) Over medium heat sautÃ© the chopped turkey bacon for a couple of minutes.
3) While the bacon is sautÃ©ing, in a medium bowl, whisk the eggs, egg whites, salt, pepper and thyme. Add the bell peppers, onion and chopped garlic. Fold in the spinach.
4) Add the egg mixture to the bacon. Sprinkle the cheese on top and bake in preheated 350Â°F oven for 20 minutes or until bubbly and lightly browned.
5) Remove from oven, divide into two portions and serve.
