Jerk Stew

Introduction

Black eyed peas and veggies, great over rice or a baked potato. Black eyed peas and veggies, great over rice or a baked potato.
Number of Servings: 6

Ingredients

    2 cups black eyed peas, cooked
    1 can low sodium beef broth
    3 cups water
    1 (15 oz) can crushed tomatoes
    2 bay leaves
    2 carrots, chopped
    2 stalks celery, chopped
    1 large clove garlic, minced
    1 med. onion chopped
    2 cups green beans, sliced
    2 tsp jerk seasoning

Directions

Throw everything into a pot. Bring to a boil and reduce to a simmer. Cook until black eyed peas are tender. (I used about 1 1/2 cups dry beans, soaked overnight.) Salt to taste once they are tender. (salt not included in nutrition info.)
