Introduction

Chard is a beet which has been cultivated to develop the leaves instead of the roots. Strip off the leaves. Boil and dress like spinach. Slice fleshy, delicately-flavoured midribs and boil in salted water. Drain and serve with melted butter. Delicious with fish, white meat or crusty bread. Ingredients

    1.5 kg chard leaves
    1 tblsp butter
    3 tblsp plain flour
    8 tablsp beef stock
    0.75 tsp salt
    0.25 tsp pepper
    0.75 tsp sugar
    dash grated nutmeg
    1 tblsp vinegar

Directions

Wash and cook the leaves in water adhering to them until tender. Drain thoroughly. Chop finely. Melt butter in a saucepan. Add flour. When frothy, stir in stock, salt, pepper, sugar, nutmeg and vinegar. Cook until smooth and boiling. Boil for 1 minute, stirring constantly, then add chard. Stir until blended and piping hot. Then serve.
