Asparagus and Mushroom Bread Pudding

Introduction

Number of Servings: 6

Ingredients

    2 french sandwich rolls
    2 cups fresh mushrooms pieces
    20 medium spears fresh asparagus
    3 oz President Fat Free Crumbled Feta
    2 large eggs
    2 cups nonfat milk
    1 tbsp ground thyme
    1 tbsp ground oregano
    1 tbsp garlic powder
    1 tsp black pepper

Directions

Preheat oven to 400˚. Prepare a 9 x 9 pan with non-stick spray. Cut french rolls into one inch cubes and lay out one layer in pan. Cover with mushrooms and asparagus, then make a final layer of bread with the remaining roll pieces.
In a medium bowl beat eggs, milk, and spices well. Pour egg mixture evenly over entire pan, then sprinkle feta over the top. Bake in 400˚ oven for about 30 minutes.

Makes 6 servings

NOTE: If you like a more crunchy, stuffing-esqe dish use a 9x13 pan and leave uncovered. If you like it much softer (like a traditional bread pudding) add an extra cup of milk.
