Farmer's Market Turkey Burger

I am always looking for new ways to add veggies to my families diet. Burgers seem to be the easiest way. This was inspired by a trip to our local farmer's market. Ingredients

1lb. package of Lean Ground Turkey
1 leek - minced
1 Yellow Bell Pepper - minced
3 T Fresh Parsley minced [flat leaf is what I use]
1/2 of a small [5"] sweet potato grated
Directions
In food processor, put leek, pepper, and parsley, pulse until finely chopped/minced. [Can also be done by hand - adds to the prep time]
Grate the Sweet potato.
Mix all ingredients in a bowl. The burgers will seem a little wet. Divide the mixture into 6 portions and grill. I use a 2-burner grill pan.
Serves 6.
I serve with a green salad made from seasonal greens and salad veggies.
