1 medium carrot
1 1/3 cup zucchini, chopped (about 1 med.)
1 2/3 cup Dikon, chopped (about half)
1 small onion
1 1/3 cups green pepper, chopped ( 1 med.)
1 jalapeno pepper
4 medium stalks celery, chopped
227 grams mushrooms, fresh, sliced (8 oz.)
18 oz. boneless, skinless chicken breast
1 TBS. green curry paste
2 TBS. Premium fish sauce
1 TBS. extra virgin olive oil
1 TBS. brown sugar
Cook \chicken and set aside.
Cook vegetables for about 10-15 minutes, just until they start to cook.
Add chicken and sauce. Toss well and cook 5-10 more minutes.
Serve alone, with brown rice, or rice noodles.
