When I was a kid, I always loved the days my mom made porcupine balls for dinner.
These are tasty little meatballs, made with ground beef, rice and brown gravy...

When I was a kid, I always loved the days my mom made porcupine balls for dinner.

Number of Servings: 4

Ingredients

    1 lb 93% lean ground beef
    1 cup rice, cooked
    1 Tbsp dehydrated onion flakes
    2 packets brown gravy mix (the type I use is fat free)
    salt and pepper, to taste

Directions

Preheat oven to 350F.

Mix the ground beef, rice, onion flakes, salt and pepper together in a bowl.

Roll into round balls (approx. 2 inches wide) and place in a 9x9 or 8x8 baking dish.

Make the brown gravy mix according to the directions on the packet, and pour over the meatballs.

Bake 30 to 45 minutes, or until meatballs are cooked through.

I like to serve with extra rice on the side, or mashed potatoes, and pour the extra gravy in the pan over it.

Makes 4 servings, 2 meatball each.

    The sodium is mostly from the brown gravy mix. I live in a small town and can't find low sodium mix, but maybe you can. :) If so, that would help alot... Of course, you could always make your own brown gravy, too. I'm just not that ambitious. lol...
