Cabbage-Tomato Soup

Introduction

This hearty soup is filling but easy on the waistline! This hearty soup is filling but easy on the waistline!
Number of Servings: 12

Ingredients

    1 Tsp Olive Oil
    1 clove garlic
    1 tsp Red chili flakes
    3 tsp Italian Seasoning
    1 cup onions, celery, carrots, Chopped
    4 cups beef stock
    2 cups water
    1 can tomato paste
    1 can diced tomatoes
    1.5 cups green cabbage Chopped
    0.5 cup rutabaga
    1 cup zucchini chopped


Directions

Makes approximately 12 "1 cup" Servings.

In Large Dutch oven or soup pot, heat olive oil over medium heat.
Add onions and saute until golden. Add Garlic, red chili flakes, Italian Seasoning and celery. Cook out for 3 minutes. Add tomato paste and continue cooking for 3 minutes. deglaze with all of the stock and add water, canned tomatoes, carrots and rutabaga. cook for 30 minutes over medium-low heat. Add cabbage. cook 30 minutes. Add zucchini. Cook just until Zucchini is tender (15 mins). Add dollop of Fat free yogurt or sour cream if desired!
