Introduction

This was a childhood favorite that my grandmother made and gave to the kids on saltine crackers. It goes beautifully with pita chips, bruscetta, wheat thins, so on and so on. When I get in a nostalgic mood, I spread it on whole wheat toast and imagine that I'm a kid again. This was a childhood favorite that my grandmother made and gave to the kids on saltine crackers. Ingredients

    1 8 ounce package of fat free cream cheese (store brand is fine)
    About 12 green olives - the kind stuffed with pimentos along with juice from the jar.
    A strong fork and wrist.

Directions

Cut up olives to a small dice. Blend together with room temperature cream cheese. Thin to dipping consistency by adding juice from olive jar. This makes about 12 generous tablespoons for spreading on chip of your choice. You can also use this as a great topper for chicken or pork tenderloin.
