Quinoa Chicken Soup

Introduction

Using healthy quinoa this soup is hearty and heart healthy Using healthy quinoa this soup is hearty and heart healthy
Number of Servings: 6

Ingredients

    1 Chicken breast half cooked and diced
    1 Tbs Olive Oil
    1/2 onion diced
    1 stalk celery diced
    1/2 cup carrots sliced
    leftover veggies - green beans and potatoes in this recipe
    1 quart low fat chicken broth
    1 cup cooked quinoa
    salt and pepper to taste

Directions

Saute onions and celery in Olive Oil until translucent, add raw carrot and cook a few minutes. Pour in chicken broth and salt and pepper to taste. Simmer for 30 minutes. Add cut up cooked chicken (I use leftovers), and other vegetables (cooked). Simmer 10 minutes. Add cooked quinoa, heat and serve.
