Fruity Chicken Salad

Introduction

This is a nice quick 'summery' chicken salad. You could substitute low-fat mayo. I haven't tried it with plain yogurt, but I imagine that it would work too! Number of Servings: 8

Ingredients

    1 cup mayonnaise
    1 tsp paprika
    1 tsp seasoned salt
    1 cup finely chopped celery
    1 cup (or 1 - 6 oz pkg) craisins (dried cranberries)
    1/2 cup chopped pecans
    1 cup seedless grapes (halved or quartered depending on the size)
    2 - 9 oz packages Perdue Short Cuts Roasted Chicken strips - chopped (or 18 oz of your own roasted chicken breasts chopped)

Directions

Combine mayo, paprika, and seasoned salt in a large bowl. Add celery, craisins, pecans, and grapes. Chop chicken breasts into bite size or smaller pieces and combine all ingredients. Chill 2 hours so flavors can combine.

Serve on a bed of lettuce, or whole wheat bread or sandwich rolls.

Makes approx. 8-10 servings.
