Whole Wheat Chocolate Pancakes

Introduction

Tastes just like eating chocolate cake for breakfast! So very yummy! Tastes just like eating chocolate cake for breakfast! So very yummy!
Number of Servings: 9

Ingredients

    1/4 cup Sugar
    2 eggs, lightly beaten
    1 1/2 cup buttermilk*
    3 Tbs vegetable oil
    1 2/3 cup whole wheat flour
    2 tsp baking soda
    1/2 teaspoon salt
    1/3 cup unsweetened cocoa powder

    *A substitute for buttermilk is to put 1.5 Tbs of lemon juice or white vinegar in a measuring cup then add milk to the 1.5 cup line. Let sit for a minute or two, and then you have buttermilk! It's basically a 1 Tbs to 1 cup ratio, lemon juice to milk.)

Directions

Combine sugar, eggs, buttermilk, and oil. In a separate bowl combine the rest of the ingredients. Add milk mixture to dry ingredients and stir until just combined. Pour about 1/4 cup batter per pancake onto a medium heat griddle or no stick skillet. Cook until bubbles form on top, 1 to 2 minutes, then flip and cook 1 to 2 minutes more.
