Seven Layer Vegetable Salad

Introduction

The classic picnic salad gets a lighter dressing. The classic picnic salad gets a lighter dressing.
Number of Servings: 12

Ingredients

    1 head lettuce, chopped
    16 ounces baby spinach, chopped
    1 pound bacon, crisply cooked and crumbled
    1 bunch green onions, chopped
    10 oz package frozen peas, thawed
    8 hard-boiled eggs, peeled and chopped
    1 cup fat-free sour cream
    1 cup reduced-fat mayonnaise
    1 oz package ranch salad dressing mix

Directions

Layer lettuce, spinach, bacon, peas, onions, and eggs in a 13x9 dish. Mix together sour ream, mayonnaise and salad dresssing mix; spread over salad. Serves 12.

Garnish with olives if desired.

  • Yikes, yup, the nutritional info is WAY OFF. It's only counting the bacon and iceberg lettuce. I wondered how it was so low with bacon and so much sour cream and mayo... still sounds good though! I'm going to MAKEOVER it and see. - 8/7/12

  • I loved it. As for the calorie count it does say per serving and there are 8 servings. 8 X 96.2 = 769.6 for the whole dish. - 7/29/08

  • Two cups of sour cream have 960 calories. The sour cream alone per serving would be 120 calories. Your calorie count is way off. - 4/4/07
