Fiesta Chicken and Rice

Introduction

Slight adaptation of recipe from "501 Heart Healthy Recipes". Slight adaptation of recipe from "501 Heart Healthy Recipes".
Number of Servings: 6

Ingredients

    1 - 14.5 oz can no-salt-added tomatoes, undrained
    1 4.5 oz can chopped green chilies, undrained
    Cooking spray
    1 Tbls extra light olive oil
    1 cup uncooked long grain rice
    3/4 cup chopped onion
    1 cloves garlic, minced
    2 lbs boneless,skinless chicken breasts, cut into bite-size pieces
    1 tsp whole cumin seeds
    1 tsp chili powder

Directions

Makes 6 servings (~1.5 cup each)

1. Drain tomatoes and chilies, reserving liquid. Add enough water to equal 1 cup of liquid.
2. Coat a large, nonstick skillet with cooking spray; add oil. Place over medium heat until hot. Add rice, onions, and garlic. Saute ~3' or until rice turns golden brown.
3. Stir in drained tomatoes and chilies, reserved liquid, chicken, and spices. Bring to a boil, reduce heat, cover, simmer ~20' or until liquid is absorbed and rice is tender.
