Key Lime Cake

Introduction

This is wonderfully rich and tangy, but should be eaten only occasionally for special occasions since it is so high in calories. This is wonderfully rich and tangy, but should be eaten only occasionally for special occasions since it is so high in calories.
Number of Servings: 12

Ingredients

    1.33 c. sugar / 2 c. flour / .66 t. salt
    1 t. baking powder / .5 t. baking soda
    3 oz pkg. lime Jell-O / 5 eggs / 1.33 c. oil
    .75 c. orange juice / .5 t. vanilla extract
    1 t. lime extract

    .33 c. lime juice / .33 c. powdered sugar

    12 oz Cool Whip Free

Directions

Beat sugar, salt, and eggs. Add baking powder, soda, jello, oil, orange juice, flour and extracts. Beat 2 min. Bake in 2 well greased and floured 9 inch pans for 25-30 min. Cool 15 min. Punch holes with fork in each tier and pour mixture of lime juice and powdered sugar over both. Cool completely and frost with Cool Whip. Serves 12.
