Salmon Frittata

Introduction

This is a great recipe for leftover salmon that pretty much everyone will eat. And the leftovers from this meal I ate for breakfast the next day! This is a great recipe for leftover salmon that pretty much everyone will eat. And the leftovers from this meal I ate for breakfast the next day!
Number of Servings: 6

Ingredients

    5 large fresh eggs
    1/4 c light cream or half and half
    3 oz light swiss cheese, shredded or chopped
    1 c cremini mushrooms
    1/2 sliced vidalia onion
    1/2 c leftover steamed asparagus, chopped
    1/4 c sundried tomatoes, chopped
    6 oz roasted salmon, flaked
    1 Tbs butter

Directions

In a cast iron skillet melt butter, saute onions, mushrooms until soft. Add asparagus, tomato and flaked salmon. In a bowl whip eggs, cream and cheese with a wisk until well blended, pour into skillet and cook on med-low heat until firm below and runny just on top. Put skillet under broiler for a few minutes until golden and puffy.
