Apple Walnut Quinoa Salad

Introduction

A healthy and delicious way to get, protein, whole grains, and fruit all at once! A healthy and delicious way to get, protein, whole grains, and fruit all at once!
Number of Servings: 15

Ingredients

    1 cup water
    1 cup apple cider
    1/2 tsp cinnamon
    1 cup quinoa, soaked and drained
    2 cups diced apples (2 apples)
    1 cup chopped celery
    1/2 cup chopped walnuts
    2/3 cup dried cranberries
    1 cup lowfat vanilla yogurt

Directions

Place water, apple cider, cinnamon and quinoa in a saucep an and bring to a boil over high heat. Reduce heat, cover, and simmer until all of the liquid is absorbed, approximately 15 minutes. Cool and transfer quinoa to a large mixing bowl and refrigerate, covered at least an hour. Add apples, celery, dried cranberries and walnuts to quinoa. Mix well. Fold in yogurt. Serve immediately. Makes 15 servings of 1/2 cup each.
