Cheesy Scalloped Potatoes

Introduction

Ingredients

    1 TBSP BUTTER
    1 1/2 c. skim milk
    2 TBSP flour
    1/2 tsp salt
    1/8 tsp pepper
    1/8 tsp. garlic powder
    1/2 c. chopped onion
    nonstick spray
    4 medium potatoes
    1/2 shredded cheddar cheese
    Snipped fresh parsley

Directions

For sauce, in small pan, melt butter & then stir together flour, salt, pepper, & garlic powder. Add milk. Cook & stir over medium heat till thickened & bubbly. Stir in onion.
Spray 1 1/2 qt. casserole with nonstick spray. Place half of potatoes in casserole. Top with half the sauce. Repeat layers with remaining potatoes & sauce.
Bake covered in 350 F oven about 65 minutes ot till potatoes are tender, stirring once.
Reove from oven & sprinkle with cheese. Cover & let stand 1-2 minutes or till cheese is melted.
Garnish with parsley.
