3 bell peppers, halved
1 C. tomatoes, diced
1/2 lb lean ground beef
1 C. yellow sweet corn
1/2 c. onion finely chopped
1 c. tomato juice
Halve green peppers and remove core.
Brown the onion and the ground beef in a skillet on medium-high heat. At the same time, boil the green peppers for 5 minutes to retain firmness.
After meat is browned, drain fat. Combine the tomatoes, corn and tomato juice in the skillet. Simmer until corn is cooked through.
Scoop the stuffing mixture into each green pepper half. Place into a baking pan. Pour tomato juice into the baking pan until it is at least 1 inch deep. Place pan in oven and cook at 325 degrees for one hour.
