Gina's Popeye Turkey Burgers

Introduction

We love burgers in my house. When I was a kid there was a restaurant my parents took me to that had a Beef burger called the Popeye because they added chopped spinach. Years later I have reinvented it, increased the nutritional value and decreased the fat. We love spinach in my house and hope you will like our Popeye Burger. We love burgers in my house. Number of Servings: 8

Ingredients

    1 1/25lb package Ground Turkey
    1 Red Bell Pepper
    1 Box 10oz Frozen Spinach - defrosted and water squeezed out.
    1 Med Onion
    1/2 T ground black pepper
    1 T oregano
    1 T paprika

Directions

By hand or with a mini Chopper, Chop finely the red pepper and the onion.

Put drained spinach, peppers and onion in a bowl with the seasonings [black pepper, oregano, paprika] Mix. Add Ground Turkey, breifly mix, don't over mix or you will toughen the burger. The burgers will be a little wet, but that will help them stay moist. Divide mixture into 8 balls, flatten into burgers and cook. A non-stick surface is best for this. I use an indoor All-Clad Grill pan. cook until done, flipping only once.

Makes 8 burgers.

Serving suggestion: We eat ours with a salad or steamed veggie and brown rice [not included in the nutritional content] Enjoy!
