Thai Chicken w/potato & peas

Introduction

Quick and easy to make - serve with pappadums Quick and easy to make - serve with pappadums
Number of Servings: 4

Ingredients

    500 grams of chicken, pieces
    1 onion, large wedges
    4 medium potaotes diced
    1/2 cup frozen peas
    1 tbspn Fish Sauce
    2 tbspn Red Curry Paste
    1 can coconut milk (lite if preferred)
    1 tbspn Extra light olive oil
    1 cup of rice

Directions

Add oil to wok
Cook rice
Add Red Curry paste - sizzle for a minute
Add chicken pieces - cook til brown
Toss in onion for 2 mins
Pour in coconut milk, fish sauce and potatoes
simmer for 30 mins
Add peas (corriander if desired) for a further 5 mins

  • there is is way too little rice for 6 persons and too little meat. Thank you that is much better. For 4 adults, I would cook 2 cups of rice, the left overs can be used to make a sweet dessert for the next day. I'm sorry Ican't change the rating to 4 stars but I would if I could. - 3/25/09

    Thanks for that - this is my first upload - i make it for a family of 5 - have updated it to suit 4 ppl as i have 2 small toddlers.

    I will now add 2 cups - just so i know for future reference
