High Fiber Guacamole

Introduction

This is a great recipe and nobody will be able to tell that you've increased the fiber with beans! This is a great recipe and nobody will be able to tell that you've increased the fiber with beans!
Number of Servings: 8

Ingredients

    1 can cannellini beans
    juice from 1 lime
    1/4 cup sweet onion
    1/2 cup fresh cilantro (or parsley if you don't like cilantro)
    2 chopped plum tomatoes
    1 mashed avocado

Directions

Chop 1/4 cup sweet onion and 1/2 cup cilantro in food processor. Remove. Rinse and drain the beans. Add juice of one lime and puree in processor until smooth.
Add puree to onions and cilantro together with 2 plum tomatoes chopped. Combine and add 1 avocado mashed with a fork.

(You can use 1/2 cup salsa instead of the tomatoes and onions to save time.)
Serve with veggies or chips.
Makes 8 servings.
