Sweet Potato Fries 2

Submitted by: HSIEG24

Introduction

These baked "fries" are great with burgers, sloppy joes, or even fish - heck, I have them with just about anything. The added spices really give you a sweet and spicy flavor. Ingredients

2 Medium sweet potatoes, peeled and cut into 1/2" strips.
1 TBSP olive or canola oil
    1/2 tsp garlic
1/2 tsp red cayenne pepper (less if you want them milder)
    1/2 tsp paprika
    1/4 tsp salt
    1/4 tsp black pepper

Directions

Preheat oven to 375*.

Toss all in a bowl until potatoes are well coated with oil and seasonings.

Place on a foil-lined baking sheet, sprayed with cooking spray. Make sure to line them up so that each fry is flat on the surface. Spray with cooking spray.

Cook for 25 - 35 minutes, flipping once, until the potatoes are the desired doneness. May need to broil for a few minutes to add crunch.

Enjoy plain, dipped in ketchup, or with light ranch dressing.

I made these using a light sprinkling of prepackackged taco seasoning. They turned out great! Thank you for the recipe. I give this 4 stars, my program doesn't seem to allow me to rate it. - 3/30/09
