Chicken Penne with Broccoli and Lemon Mustard Sauce

Number of Servings: 6

Ingredients

    4 boneless/skinless chicken breasts
    12 oz. whole wheat penne, cooked
    1 bunch broccoli, steamed

    For lemon mustard sauce:

    4 Tbsp. Olive Oil
    Juice and zest from 1/2 lemon
    scant 1 Tbsp. whole grain mustard
    red pepper flakes, salt and pepper to taste

Directions

Preheat oven to 400 F. Combine ingredients for sauce and combine with chicken in baking dish. Bake for 15 - 20 minutes until done. Slice chicken into bite size pieces. Toss chicken, including all oil from baking dish, with penne and broccoli.
