Introduction

Number of Servings: 16

Ingredients

    3 cups cooked black beans (about 2 cans, drained and rinsed)
    1 small onion, diced
    1/2 green pepper, diced
    3 cloves garlic, minced
    2 T ground cumin
    1 1/2 t olive oil
    2 T chopped fresh cilantro
    1/4 c vegetable broth

Tips

I spread this on bread or tortillas with vegetables for a quick sandwich, I dip carrots and celery into it, and I eat it with tortilla chips for a snack.


Directions

Drain and rinse black beans if using canned.
Place olive oil in skillet set over medium-high heat. Add onions, peppers, and garlic and saute about three minutes, until vegetables are fragrant and starting to brown slightly. Add cumin, stir well, reduce heat to medium and cook another two minutes.
Place beans in food processor and pulse several times. Add vegetable mixture and pulse a few more times. Add vegetable broth in small batches to thin the dip to the desired consistency. Garnish with chopped cilantro. Serve immediately or store in refrigerator for up to 10 days.

Makes 16 1/4-cup servings!

    Nice flavor - makes a good filling for a burrito. Top with a little nonfat shredded cheese and heat. Serve with chopped lettuce and tomato. Makes a great lunch for under 300 calories. - 7/9/09

    I added 2 cloves of roasted garlic to the beans in the processor and switched out chopped green onions for the cilantro. Took it to work and only got 1 small tablespoon of it once everyone else tasted it! :-) Staff has now started buying the ingredients for me to make it and bring it in! - 7/9/09

    I added salsa (mild as that's the intensity I like) for added flavor and to thin instead of water or broth. I mixed it in by hand to keep the chunky consistancy. Thx for sharing such a veratile recipe. - 7/9/09

    Great recipe! I have made this many times but w/o the cilantro, green pepper, & broth. Instead, I fold in spicy salsa. I serve this on top of whatever mixed veggies I have cooked up, sprinkle 1/4 cup of reduced fat cheese on top and heat up/melt in microwave. Very satisfying meal. - 7/9/09

    After reading the above comments, I made some changes (because I'm broke). I only used a bag of dried black beans (which yields 6 c.), black bean & corn salsa (1.5 c.), onion, garlic & cumin. It was amazing!! We ate it with tortillas, on turkey tacos, and even as just a bean & veggie wrap. Thanks!! - 10/14/09

    Lovely beans! I like to add chopped tomatoes, depending on how I'm serving it, as a dip or a filling. Spoonful on top of a salad composť (think "tossed salad only in layers and not tossed") is wonderful. Toasting cumin seeds dry and then grinding = Amazing & fragrant, worth the extra step. - 9/3/09

    SO good! I made a half batch, but doubled the grn pepper and didn't use the broth, just pulsed it a few more times to make the whole thing creamy.     I loved this recipe, I gave it more of a soupy texture (I didn't drain the beans all the way/I added a good amount of vegetable stock) and just ate it that way. I loved the fresh cilantro and the crunchy bell peppers. I'm definitely making this again! - 7/20/09

    Would make again. Suggest adding spicy salsa and reducing cumin. I've used it as a burrito filling, quesadilla filling, and a dip. I made in blender because I don't have food processor... word of advice: Don't! You will need to add more liquid in order to get the blades spinning well. - 1/20/10

    I made half a recipie, and added some chipotle powder and cayenne pepper. I think you could easily double the amount of onion and bell pepper that goes into this, as I thought it tasted a bit bean-y. Good recipe though, I'll enjoy it this week :) - 8/9/09

    FABULOUS! I made this Sunday and it super easy and after a full batch and some friends visiting there is just a tiny bit left. Even the kids devoured this.     This was yummie! I cut the recipie in half, but kept the same amount of onion. I didn't have broth, so I used the water from the can of beans.     Good recipe. I wound up putting the cilantro in the hummus rather than just as a garnish. Then I added about a teaspoon of salt. Next I thought I would try it with a little zing and added some jalapeno sauce. It made a great bean dip. I would have added some lime, but I didn't have any. - 9/7/09

    Spark this up by using fresh or reconstituted LIME juice in place of part of the broth. Be sure to shop for low sodium canned beans and give them a quick rinse. If you are adding salsa, not really a hummus -- then go all out with a black bean salsa. - 8/12/10

    Very yummy! I added a couple pinches of kosher salt to mine to bring out the flavors (I rinsed my canned beans really well, so much of the sodium from the can was gone.) I also left out the peppers (not a fave in our house). Made a burrito this morning; hubby plans to scoop with baked pita chips. - 2/5/10

    Not my fave. I love black beans, this just went totally wrong. Might be better if black beans were cooked first since straight out of can they tend to be crunchy. Its also lacking in flavor, tried multiple spices but just couldn't make it taste good, too crunchy. - 9/29/09

    I have made this a few times. If made without oil or garlic (more onions, hot peppers) with low-sodium beans (or dry beans, no salt), the sodium + calorie content remain low. My family loves it. - 9/21/09

    Great idea! Gotta watch the sodium in canned anything, though to head off future high blood pressure probs. And this + variations can have plenty of flavor to take the place of salt. I need to learn to cook my own beans from scratch, then freezing for convenient future use. - 8/18/09

    I made this last night. However I didn't have any bell peppers. I put some cilantro in the onion mixture when it was frying too.
    Then I squeezed a bit of fresh lemon juice over top of the whole thing...YUM!! I brought it to work today and my coworker immediately wanted to know the recipe!! YUM!! - 4/13/11

  • Made this for some vegetarian friends. Smeared it on some grilled flatbread and topped with shredded lettuce & a cucumber-tomato-garlic-onion-mint medley. Sort of like a greek tostada.   • I added more onion and peppers-red and yellow-only had 1 Tbs cumin so added a squirt of sriracha and 2 tbs jared pickled jalepenos. Next time I'll do the full 2 T cumin.
