Ginger Crinkles from Food Network

Introduction

The original recipe uses some ingredients I didn't have, like turbinado sugar. I adapted the recipe here based on what I had on hand. These cookies are AWESOME!!! If you like ginger snaps, you'll love these. Mine turned out thicker than the ones pictured of the FN website. They are crisp on the outside and slightly chewy in the middle...just like the perfect ginger snap! The original recipe uses some ingredients I didn't have, like turbinado sugar. Ingredients

    .66 c. canola oil
    1 c. packed brown sugar
    .3 c. white sugar
    1 large egg
    4 T. molasses
    2 c. whole wheat flour
    2 t. baking soda
    1.25 t. ground cinnamon
    1.25 t. ground ginger
    .25 t. salt

Directions

Preheat oven to 350

Mix oil and sugar in large bowl until combined. Beat in egg until combined. Stir in molasses until incorporated. Sift flour, soda, cinnamon, ginger, and salt over wet ingredients and stir til combined.

Roll dough into 1-inch balls. Place 2 in. apart on parchment lined cookie sheet. Bake 10-12 minutes, just til set.

Cool completely before storing in airtight container.
