Pumpkin Coconut Bread

Introduction

Ingredients

    2 eggs, plus 1 egg yolk
    1 cup sugar
    1 cup vegetable oil
    1 cup pumpkin
    1 3.6-oz. pkg. coconut pie filling mix
    1-1/2 cup all-purpose flour
    1 tsp. baking soda
    1 tsp. baking powder
    1/2 tsp. salt
    1/2 tsp. ground cinnamon
    1/2 tsp. ground nutmeg
    1 cup chopped nuts

Directions

Beat eggs and egg yolk; add sugar and oil. Add pumpkin, coconut pudding mix, flour, soda, baking powder, salt, spices and nuts. Mix well.

Bake in greased 9x5x3-inch loaf pan in preheated 350-degree oven one hour, or until done.

Serves 8.
