Number of Servings: 10

Ingredients

    1/2 lb peeled, trimmed, diced carrots (3 med)
    1/4 cup diced bell pepper (red)
    1 garlic clove, minced
    2 tsp fresh minced ginger
    1 small onion, chopped
    1/4 cup cider vinegar
    1/4 cup water
    1/4 cup raisins (golden)
    1/4 tsp dry mustard
    1/4 tsp salt
    1/8 tsp red pepper flakes

Directions

Simmer everything together until it congeals nicely into a gel. Good on meats, or tossed over sauteed cabbage!
