Tomato and Chickpea Quinoa

Ingredients

    1 cup dried quinoa
    1 14.5 ounce can of diced tomatoes
    1 14.5 ounce can of chick peas, drained
    1 green bell pepper, sliced into strips
    3 cloves garlic, crushed
    1 tsp black pepper
    1 tsp kosher salt
    1 tsp cumin

Directions

1. Cook the quinoa per the product instructions.
2. Saute the green bell pepper and garlic until tender.
3. Add the tomatoes and drained chickpeas. Heat until cooked through.
4. Season with salt, pepper, and cumin.
5. Mix the vegetable mixture with the quinoa and serve immediately.
