Cod (fish), 2 fillet
Brown Rice,cooked, 2 cups
Red Bell Peppers, 1 cup, chopped
Snap peas, 1/4 cup
Leeks, 1/2 cup
Lemon Juice, 1 lemon yields
White Wine, 1 fl oz
Butter, unsalted, 1 tbsp
Place fish on paper, surround with rice, cover with vegatables. Add butter pieces, dash of wine and juice of one lemon.
Salt and pepper to taste.
Fold over remaining parchment paper, roll edges and stable shut.
Bake at 425 for 30minutes.
