Not as unhealthy as it sounds! Dry elbow mac fried in olive oil gives this dish its unique toasty flavor. Passed down to my grandmother from her French Canadian relatives, to my Mom, me, and now to you! I hope you enjoy! Not as unhealthy as it sounds! Ingredients

1 Tbsp Olive Oil
1 lb elbow mac (no ridges, they don't fry correctly)
1/2 cup chopped green pepper
1 cup chopped onion
16 oz 93% lean ground beef
28 oz can crushed tomato
28oz can tomato puree
28oz can water
salt and pepper to taste
Directions
Makes 20 1 cup servings
In large pot, on high, fry elbow mac in olive oil until brown, stirring constantly. Don't be afraid to let it get really dark but not burned...the darker the more toasty flavor. When satisfied set aside in large bowl.
Add pepper and onion to pot and cook with cooking spray if gets sticky...until onions are translucent.
Then mix in ground beef, cook until browned.
Then mix in the fried mac, pureed & crushed tomatoes, and 28oz can of water, salt and pepper to taste.
DO NOT MIX AGAIN. If you do it will get pastey.
Let simmer on low heat until pasta is cooked and liquidy tomato juice is almost gone. I do a taste test to know.
