Spinach Lentil Soup

Ingredients

    Carrots, raw, 1 cup, chopped (remove)
    Onions, raw, .5 cup, chopped (remove)
    Coconut Oil, 1 tbsp (remove)
    Water, tap, 6 cup (8 fl oz) (remove)
    Salsa, 2 cup (remove)
    Lentils, 1.25 cup (remove)
    Salt, .75 tsp (remove)
    Spinach, fresh, 1 package (10 oz) (remove)

Directions

In a large saucepan or Dutch oven, saute carrots and onion in oil until tender. Add the water, salsa, lentils and salt. Bring to a boil. Reduce heat; cover and simmer for 50-60 minutes or until lentils are tender. Stir in spinach 5-10 minutes longer or until spinach is wilted.
