This has a bit of zip...but not too much. You can add more or reduce on the spices. I like mine with a lot of garlic. This has a bit of zip...but not too much. You can add more or reduce on the spices. I like mine with a lot of garlic.Number of Servings: 11
Ingredients
-
1 1/4 Lbs. Ground extra lean turkey breast
1 tbsp. olive oil
1 medium onion chopped
2-3 tbsp. minced garlic
8 oz. canned diced green chilis (mild or hot)
1 tbsp. ground cumin
1 tbsp. dried oregano flakes
1 tsp. cinnamon
1/2 tsp. chili powder
1/2 tsp. white pepper
2 tsp. liquid smoke (optional)
2 - 15 oz. cans black beans (or use any other beans you like)
1 - 15 oz. can pinto beans (or use any other beans you like)
1 - 14.5 oz. can diced tomatoes
1 - 8 oz. can tomato sauce (I use no salt variety)
3 cups frozen corn
4 cups chicken broth
2 tbsp. flour
Directions
In crock pot add all beans (drained and rinsed), tomatoes (drained), tomato sauce, frozen corn, chicken broth, flour, and liquid smoke.
In a large skillet place olive oil, onion, garlic, and turkey...saute for about 10 minutes.
Add all spices and green chilis (drained), saute another 5 minutes or so.
Add turkey mixture to crock pot.
Cook for about four hours on high setting or until desired thickness. Makes approximately 11 - 1 cup servings.
Serving suggestions: top with 2% shredded cheese, non-fat sour cream, chopped onion (can use green onion if desired) and corn bread on the side. These items are not included in the nutritional information here.
