Quick Chicken & Dumplings

Introduction

Fast, low calorie version of an old favorite using Hearty Smart Bisquick for the dumplings.
Great way to use left-over Thanksgiving turkey!
Fast, low calorie version of an old favorite using Hearty Smart Bisquick for the dumplings.

Number of Servings: 7

Ingredients

    1/2 C chopped onion
    1/2 C chopped celery
    garlic
    10.5 oz can cream of celery soup
    4 soup cans of water (only 3 for thicker soup)
    4 C cubed cooked chicken or turkey
    DUMPLINGS:
    2 C Heart Smart Bisquick
    2 t dried basil
    2/3 C skim milk



Directions

In a large saucepan, saute onions, celery and garlic. Add soup, water and chicken. Add salt, pepper and dried basil as desired. Bring to a boil and reduce to a simmer. In a small mixing bowl, combine bisquick, basil and milk with a fork until moistened. Drop by tablespoons onto the simmering mixture. (14 dumplings) Simmer uncovered for 10 minutes more. Makes 7 one cup servings.
