Easy Deviled Eggs

Number of Servings: 24

Ingredients

    1 dozen eggs, large
    2 teaspoons dijon mustard
    1/3 cup mayonnaise, light
    1 Tbsp minced onion
    1/4 teaspoon tabasco
    Paprika, a dash
    Salt and pepper, a dash



Directions

Makes 24 servings (1/2 egg each)

Take a large saucepan, fill about half way with water and gently add the eggs to it. Water should cover eggs. Bring eggs and water to a boil, cover the pan and remove from heat. Let the eggs sit covered in the water for 15 minutes. Drain the water from the pan and then run cold water over the eggs to cool. Drain and refill the pan again with cool water and let sit a few minutes to completely cool the eggs.

Next, peel the eggs by slicing each egg in half lengthwise using a sharp knife. Carefully remove the yolk halves with the knife or use a spoon and place the yolks in a small mixing bowl. Take the egg white halves and arrange them on your serving plate.

Next, take a fork and mash the egg yolks and add the mayo, onion, tabasco, and just a dash of salt and pepper and mix well. The egg yolk mixture is then ready to be spooned into the egg white halves, divide evenly. Finish by sprinkling the assembled eggs with paprika. Enjoy!
