Number of Servings: 32

Ingredients

    2 cups Wholemeal SR flour
    1 cup 100% whey protein powder (vanilla)
    1/2 cup Splenda
    1 tsp baking powder
    1/2 cup low fat cottage cheese
    1 egg
    1 cup fat free thick Greek yogurt, unflavoured
    1 cup no added sugar apple sauce
    1 cup fat free milk
    1 1/2 cups frozen mixed berries (or fresh)
    1 tsp vanilla essence

Directions

Preheat oven 165C
Lightly spray a slice tin with olive oil spray
Line the base of the slice tin with baking paper
Put flour, protein powder, baking powder and Splenda into large mixing bowl'
Into a smaller bowl put egg, cottage cheese, yogurt, apple sauce, vanilla essence and milk and mix well until combined
Add the wet ingredients to the dry ingredients
Mix gntly to just combine
Add the frozen berries and mix in.
Pour mixture into prepared tin
Cook until firm to touch, browned - about 35 - 40 min.
Cool before cutting into 36 eqqual pieces.
Makes 36 pieces.
