Ingredients

1 tbsp olive oil
1 lb package Ground turkey
1 small nion
2 ribs celery, chopped
1/4 cup shredded carrot
2-3 garlic cloves
1 egg
1/3 cup read crumbs
Directions
Heat the olive oil in a skillet over medium heat. Chop onion and garlic and add to pan. Cut up celery and shred carrot, add to pan as well. Saute for 5-10 minutes or until soft. Allow to cool for a few minutes.
In a bowl, combine the ground turkey, veggie mixture, egg, and bread crumbs. Season with salt and pepper to taste. Combine evenly and form into a loaf on a baking sheet (or put in a loaf pan). Bake in a 400 degree oven for 45 minutes, or until cooked through.
