4 cups chickpeas
10 cloves Garlic
1/4 cup Lemon Juice
2 tbsp. tahini
1 tsp. Olive oil
1 dash salt
Sprinkle with the dash of salt.
Wrap the aluminum foil around the garlic so that all edges are closed.
Bake in an oven set at 375Â°F for 8 minutes (or unti golden brown and soft. Take out of oven and set aside.
In a strong food proccesor place chickpeas, remaining fresh garlic,lemon juice and tahini.
Puree the mixture until smooth. You may need to stop food proccesor and stir a couple of times.
Add roasted garlic and puree for another minute.
Set aside (refrigerate) so all flavors can mingle...approxiamately 1-2 hours.
