Mom's Pizza Dough

Ingredients

1.25 cup Unbleached, enriched all purpose flour
.75 tbsp instant yeast
Pinch Salt
.75 cups lukewarm water
1/8 cup extra virgin Olive oil
Directions
Preset oven to 400 degrees.
Combine flour, yeast and salt in medium bowl, make well in centre.
Mix water and oil, add to well in flour.
Blend with hands, add more flour as needed to make soft but not sticky dough. Lightly oil dough.
Allow to rest 15-20 mins (while you prepare you pizza toppings).
Punch down.
Spread in greased pizza pan.
Add toppings.
Let stand another 20 minutes before baking.
Bake for 15-17 minutes, or until dough is lightly brown on the bottom.
Makes 8 equal slices.
