Ingredients

    2TSP OLIVE OIL.
    1 LARGE ONION CHOPPED.
    1CLOVE GARLIC,MINCED.
    1 1/2 TSP CURRY POWDER.
    2 CUPS WATER.
    2 MEDIUM NEW POTATOES,CUT IN 1-IN PECES.
    1 CUP DRIED YELLOW SPLIT PEAS(1/2 OF 16-OUNCE BAG.)
    2 CUPS BABY SPINACH

Directions

heat oil in 3-qt saucepan over medium heat.
saute onion and garlic 6 minutes until gloden,add cury powder and cook for 30 seconds.
add water,potatoes and split peas;bring to boiling.
reduceheat and simmer,covered,25 to 30 minutes until poatoes and split peas are tende.
remove from heat;striin spinach just until wilted.
